Ingredients

  • Filling:
  • 1 cup of sugar
  • 3/4 cup of flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 eggs
  • 2/3 cup of pumpkin
  • 3 oz. cream cheese
  • 3 tbs. butter
  • 1/4 tsp. vanilla
  • 1 1/2 cups of confectioners sugar
  • 1/4 cup of pecans
  • (I double both receipes using 8 oz. of cream cheese and 8tbs. butter and 1 1/2 boxes of sugar).

Preparation

Step 1

Mix all ingredients and bake in a greased 15 1/2x10" jelly roll pan (solid cookie sheet) for 12-15 minutes. Turn out onto towel and sprinkle with confectioners sugar. Roll up and cool for 1 hour. Unroll and spread with filling. Roll up and sprinkle with confectioners sugar.

If the cake is really hot and moist when you roll, it may stick to the towel. Put the towel on a large cake rack and let it cool a few minutes before rolling.
