Ingredients

  • 4-5 pounds veal breast
  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup bread crumbs
  • 2 large eggs
  • 1/2 cup fresh parsley chopped
  • 1 clove of garlic finely chopped
  • olive oil
  • salt and pepper to taste

Preparation

Step 1

Preheat oven 350F
cut a pocket in the veal breast
Mix all stuffing ingredients thoroughly
Pour a bit of the olive oil into veal pocket and rub oil all over the inside of the breast with your hands
salt and pepper the pocket to taste
stuff the veal breast with stuffing
suture the veal with string of steel rods used for stuffing a turkey
Place veal in baking dish
rub entire breast with oil and then salt and pepper to taste

Now you can add whatever vegetables you like potatoes,carrots, sweet potatoes celery onions drizzle oil over vegetables

Place pan in the oven and bake until golden brown
Approximately 1 to 1 1/2 hours
