Ingredients
- 1/2 cup unsweetened cocoa powder
- 1 1/2 cups water
- 3/4 cup sugar
- 1/4 cup corn syrup
- 8 ounces dark chocolate, finely chopped
- pinch of kosher salt
- 1 tsp vanilla extract

Step 1
Put the cocoa into a medium bowl and set aside. Put the water, sugar, and corn syrup into a small saucepan and bring to a boil over medium heat, whisking to dissolve the sugar. Add 1/2 cup of the cocoa and whisk to make a completely smooth paste. Add the remaining syrup to the paste and whisk until smooth. Add the chocolate and salt and whisk until all of the chocolate is melted. Whisk a=in the vanilla extract. Let the sauce cool at room temperature and store in an airtight container in the fridge for up to three weeks.
