Ingredients
- 1/2 cup brown sugar
- 1 1/2 tsp. salt
- 1 tbsp. dried thyme
- 1/2 tbsp. ground cumin
- 1 tsp. crusehd bay leaf
- 1 tsp. freshly ground black pepper
- 1 tsp. ground oregano
- 1/2 tsp. ground allspice
- 1/4 tsp. ground cloves
- 1/4 tsp ground cinnamon
- 1 tbsp. ground cardamom
- 2 pounds pork tenderloin, trimmed of silver skin
- Basting Sauce ( follows)
- Honey Jalapeno Sauce ( follows)
- Basting Sauce
- 1 cup apple cider
- 3 tbsp. brown sugar
- 2 tbsp. chili powder
- In a small bowl, whick together all the ingredients.
- Honey Jalapeno Sauce
- 2 jalapeno peppers, seeded
- 1/4 cup honey
- 1 tbsp.minced garlic
- 1 tbsp. minced fresh cilantro
- 1/2 tsp. allspice
- 1/2 tsp. cumin
- 2 tsp. olive oil
- 2 tsp. balsamic vinegar
- 2 tsp. Dijon mustard
- In a blender or food processor, process all the ingredients until smooth

Preparation
Step 1
In a large shallow dish, mix together all the ingredients except the pork tenderloins. Add the tenderloin and coat completely. Cover with plastic wrap and marinate overnight in the refrigerator.
Grill the tenderloin turning and basting with the basting sauce every 3 minutes. Grill for a total of 20 minutes. Slice the meat thinly on the bias when slightly cool and arrange on the platter. Refrigerate until the picnic. Serve with honey palapeno sauce.
