  • 4 cups goat's milk
  • 2 cups sugar
  • 1/4 cup honey
  • 1/4 tsp baking soda
  • pinch of kosher salt

Step 1

Put all the ingredients in a medium heavy saucepan and whisk over medium heat to dissolve sugar and honey. Carefully bring to a boil and then reduce the heat to low. Adjusting the heat as needed, keep the cajeta at a simmer until the color changes to a dark brown and registers 225F on a candy thermometer, about 45 minutes. Stir infrequently and watch to make sure it doesn't boil over.

When it reaches 225F, remove from heat and let cool at room temperature. Store in airtight container in the fridge for up to one month.
