Pastry Cream
This recipe is for a basic pastry cream. Additional ingredients can be added to flavor it such as chocolate and fruit compounds.
One recipe is also used for one banana pudding.

Ingredients
- for chocolate cream:
- 1/4 cup cornstarch
- 3/4 cup sugar
- 2 cup whole milk or half & half
- 4 egg yolks, lightly beaten
- 1 pinch salt
- 2 tsp vanilla extract
- 1 oz unsalted butter
- 1 vanilla bean
- add 4 oz melted bittersweet chocolate

Preparation
Step 1
Combine cornstarch with sugar in a mixing bowl and stir in 1/2 cup of milk. Blend the egg yolks into cornstarch mixture, stirring with a wooden spoon until completely smooth.
Heat milk in a with split vanilla bean until boiling. Be careful not to scald milk. Remove from heat and discard bean.
Temper the egg mixture with milk, whisking constantly and add to saucepan. Continue cooking over medium heat until mixture comes to a boil and whisk leaves trail in pastry cream. Remove from heat and stir in vanilla and butter (add chocolate or other compound in this step), and cool over an ice bath.
