Ingredients

  • 3/4 cup white miso
  • 1/2 cup sugar
  • 1/4 cup sake
  • 6 tbsp mirin
  • 6-8 cod fillets

Preparation

Step 1

Over a double boiler or under gentle heat, combine miso, sugar, sake, and mirin and whisk together until sugar dissolves. Remove from heat and let cool. Refrigerate until marinade is cold.

Add cod into marinade and refrigerate 24-48 hrs. Prior to cooking, scrape off most of marinade that is covering fish, but do not rinse. Preheat oven to broil.

Place fish on greased foil-lined baking sheet and cook 6 inch away from heating element. Broil 7-10 min until browned but this may vary depending on thickness of fish.
