Ingredients

  • 2 bunches of green onions
  • 3 to 9 habanero peppers, seeded and chopped
  • ½ vegetable oil
  • ½ dark rum
  • ¼ dark brown sugar
  • ¼ white vinegar
  • 2 T salt
  • 4 tea minced garlic
  • 1 T black pepper
  • 1 T minced ginger
  • 1 ½ ground all spice
  • ¾ grated nutmeg
  • ½ tea ground cinnamon
  • ¼ ground cloves
  • Zest and juice of 4 limes
  • 1 4 to 6 lbs chicken cut into 8 pieces

Combine all the ingredients in a plastic bag. Marinade chicken for 8 to 24 hours. Grill chicken.
