Ingredients
- 2 C. vanilla wafer crumbs
- 1/2 C. melted butter
- 1 14oz. pkg caramels
- 1 5oz. can evaporated milk
- 2 C. chopped pecans, toasted
- 32 oz. cream cheese
- 1 C. sugar
- 5 tsp. cornstarch
- 2 tsp. vanilla extract
- 4 eggs
- 1 C. chocolate chips, melted

Preparation
Step 1
Combine crumbs and butter, press into bottom of 10" springform pan. Bake at 350* for 8-10 minutes.
In a saucepan over low heat, melt caramels and evaporated milk, stirring until smooth. Pour over crust and sprinkle with 1-1/2 C. chopped pecans.
In large bowl mix together cream cheese, sugar and cornstarch till smooth. Add egss one at a time, stir in chocolate and vanilla. Pour over crust. Bake at 350* for 15 minutes, reduce heat to 200* and bake 1 hour 10 minutes longer. Turn off oven, run knife around edge of cake and leave in oven for 1 hour. Chill overnight
