  • Salad Ingredients: Grilled Apple Chicken:
  • 3/4 cup sugar 3/4 cup unsweetened apple juice or
  • 1 tsp salt apple cider
  • 1 tsp dry mustard 1/3 cup lemon juice
  • 1/3 cup red wine vinegar 3 Tbsp honey
  • 1 cup vegetable oil 1/4 tsp garlic powder
  • 1 tsp onion juice 1/4 tsp ground ginger
  • 1 Tbsp poppy seed (optional) 4 1/2 tsp canola oil
  • 1 cup sliced almonds 6 boneless chicken breast
  • 6 cup torn fresh spinach
  • 1 quart strawberries, sliced
  • 2 cups grapes, sliced
  • 3 cups chopped cooked chicken

Step 1

Chicken Recipe:
Combine first six ingredients in bowl, set aside 1/3 of the mixtures. Add oil to the remaining juice mixture. Pour into a large resealable bag, add chicken. Refrigerate for at least 4 hours. Drain chicken & discard marinade. Grill, covered, over medium heat for 5 - 7 minutes on each side or until juices run clear, basting occasionally with reserved juice mixture:
Salad Recipe: Process first 5 ingredients in a blender until smooth, stopping once to scrape down sides. Turn blender on high, and add vegetable oil in a slow, steady stream. Pour mixture into a serving bowl, and stir in poppy seeds, if desire. Chill. Bake almonds in pan at 350, stirring occasionally, 5 - 10 minutes or until toasted. Place torn spinach on individual serving plates; top with sliced strawberries, grapes, chicken, and toasted almonds. Serve with dressing.
