Ingredients

  • 3 pounds pork tenderloin
  • 1 pound bacon
  • 3/4 cups low sodium soy sauce
  • 1 tablespoon minced onion
  • 2 cloves garlic, minced (or garlic powder)
  • 1 tablespoon white or wine vinegar
  • 3/4 cups brown sugar

Preparation

Step 1

Wrap the tenderloin in bacon, with the ends of the bacon slices on the bottom. Place in a casserole pan. Poke holes in the meat with a fork.

Combine rest of ingredients in a small bowl. Stir well. Pour marinade over meat. Refrigerate, uncovered, 2-3 hours.

Bake in 300 degree oven until the internal temperature reaches 140 degrees. It's hard to predict how long to cook it as it depends on the size of the tenderloin. My last one was done in an hour.
Remove from oven, cut meat into slices and allow the meat to soak up the juices in the pan. Or serve as is and pour over the slices.
