- 2 cups vegetable stock or water
- 1/4 cup grated parmesan cheese

Step 1
1. In a large skillet, over medium high heat, toast quinoa, shaking constantly, until golden, about 3 minutes. Add stock and bring to a obil. Reduce heat to low and simmer, uncovered for 12 to 15 mintues, or until liquid has been absorbed. Let cool slightly and add cheese.
