Ingredients
- 1 teaspoon of dijon mustard
- 2 cloves of garlic
- 2 teaspoons of fresh lemon juice
- 1 egg
- 1/2 cup of extra virgin olive oil
- 1/2 cup of grapeseed or vegetable oil
- Salt (to taste)

Preparation
Step 1
Start by mixing the mustard, garlic, and egg in a food processor, blending it until combined. As the machine is running, pour the oil in slowly.
Once the aioli has the creamy texture you want, stop the food processor and mix in the lemon juice and salt with a spatula. You can also add pepper—and any other seasonsings—if you’d like.
If you prefer, mix your aioli with a mortar and pestle rather than a food processor for a less smooth, more homemade, texture.
