Ingredients

  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 teaspoon cayenne
  • 1 teaspoon dried oregano
  • 2 pounds medium shrimp, peeled and deveined (see Note)
  • 2 tablespoons vegetable oil
  • 16 taco size tortillas (corn or flour)
  • Pico de gallo (recipe follows)
  • Pineapple BBQ Sauce (recipe follows)
  • lime wedges for garnish

Preparation

Step 1

COMBINE onion powder, garlic powder, paprika, cayenne and oregano in a large mixing bowl. Add shrimp and toss gently to cover.

HEAT oil in a large skillet over medium-high heat. Shake excess spice mixture from shrimp and sautust until cooked through.

SERVE shrimp in corn or flour tortillas, topped with Pico de Gallo and Pineapple BBQ Sauce (recipes follow). Serve lime wedges on the side.
