Ingredients

  • puffs
  • 1/2 c (1 stick) of butter
  • 1 cup of water
  • 3/4 c flour
  • 2 tbsp granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 4 eggs
  • chocolate cream
  • 5.85 oz instant chocolate pudding mix
  • 1 1/2 c cold milk
  • powdered sugar for dusting
  • 1 c sour cream

Preparation

Step 1

puffs
1.preheat oven to 375 degrees
2.in a med bowl combine flour, sugar and cocoa powder
3.melt butter over med heat in a med saucepan
4.add water and bring to a rolling boil
5.stir in the flour mixture and continue to stir
6.dough will become a ball but keep stirring over heat for 1 min
7.pour dough into the large bowl of a mixer
8.turn on the mixer and beat for 2-3 min on medium speed and allowing dough to cool slightly
9.add eggs one at a time as you continue to beat dough
10.dough will become creamy and smooth
11.line a baking sheet with parchment paper and scoop dough onto baking sheet by the tablespoonful 1 inch apart
12.bake for 20 minutes
13.allow to cool


filling
1.in a large bowl whisk together pudding mix and milk until smooth
2.whisk in the sour cream until smooth
3.place in the refrigerator for 1 hour

3.slice puffs in half and fill with pudding
4.dust the top with powdered sugar
5.Method 2
6.place pudding mixture into a pastry bag with a pointy tip
7.stick the tip carefully into the puff and fill with pudding
8.dust the top is powdered sugar
