Pasta w/Lobster and Tarragon Sauce 0 Picture

Ingredients

  • 2 T olive oil
  • 1/2 c finely chopped yellow onion
  • 2 lb 3 oz can Italian plum tomatoes
  • 2 tsp dried tarragon
  • salt/pepper
  • 1 c heavy cream
  • pinch of cayenne
  • 1/2 lb cooked lobster meat (or more)

Preparation

Step 1

Heat oil in saucepan. Add onions, reduce heat and cook covered till tender (about 20 minutes). Add canned tomatoes to onions. Add tarragon, salt/pepper and bring to boil. Reduce heat and simmer covered, stirring occasionally for about 30 minutes. Remove from heat and let cool slightly. Puree mixture in Cuisinart. Return to saucepan and stir in heavy cream. Set over medium heat and simmer stirring often (about 15 mins.) Taste and correct any seasoning. Stir in lobster meat and cayenne. Simmer further for additional 3-5 mins or until the lobster is heated through.

Bring water to boil and cook spaghettini al dente. Drain and arrange on plates. Spoon lobster sauce over pasta and serve.
