Ingredients
- Ladyfingers:
- 6 eggs
- 1/2 c plus 2 T sugar
- 1 c flour
- 2 T confectionary sugar
- 2 T sugar
- Filling:
- 3 eggs
- 1/2 c sugar
- 1 c plus 1 T brewed espresso
- 2 T brandy
- 1 c marscapone

Step 1
Preheat oven 350 degrees
Ladyfingers:
Separate eggs. Beat yolks. Add 1/2 c plus 2 T sugar and whip. Add 1 c sifted flour. Beat egg whites till stiff. Fold into first mixture. Grease cookie sheet. Put batter thru pastry bag and shape into ladyfingers on cookie sheet. Sift 2 T confectionary and 2 T sugar together over the baked fingers. Bake for 10 minutes until lightly brown. Cool on wire rack. These will be thin.
OR CHEAT
Buy a couple of boxes of Italian brand ladyfingers at Rubino or Wegmans and save yourself a hell of a lot of time.
Filling:
Separate eggs. Beat 3 yolks and add 1/2 c sugar mixing well. Mix in 1 T brewed espresso with 2 T brandy and add to egg misture. Beat the marscapone and add to egg mixture mixing well. Beat 3 egg whites till stiff and fold into first mixture.
Lightly dip fingers into remaining espresso and layer in trifle bowl. Follow with cheese mixture. Continue layering ending with a final layer of the cheese. Sift cocoa over top and refrigerate overnight.
