Ingredients

  • 1 1/2 cup all purpose flour
  • 2/3 cups sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup mashed very ripe bananas
  • 1 large egg
  • 1/4 cup (1/2 stick) butter, melted
  • 1/4 cup fat free or light sour cream
  • 2 tsp vanilla extract
  • 1/4 cup low-fat milk
  • 1/2 cup mini semi sweet chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees.

1. Line a mini muffin pan with baking paper cups
OR lightly coat the muffin pan with cooking
spray (PAM)
2. In medium bowl, combine the flour, sugar, baking
powder, & salt
3. Stir with a fork to blend
4. In mixing bowl, combine the mashed bananas,
egg, melted butter, sour cream, vanilla
extract, and milk
5. Beat with mixer on medium speed until well
blended
6. Reduce the mixer speed to low and blend in the
dry ingredients (do not overmix)
7. Stir in the chocolate chips
8. Fill each muffin cup with 1 tblsp batter
9. Bake the muffins for about 20 minutes or until
a toothpick inserted in the middle comes
out clean
