Shady Lady Pasta Puttanesca
This recipe for a fragrant and hearty pasta can easily be doubled-serve it with lots of crusty bread and a nice bottle of wine.

Ingredients
- 8 oz. penne pasta
- 3 tablespoons olive oil
- 3 large garlic cloves, coarsely chopped
- 1/2 cup pitted black olives, chopped
- 1/2 cup red or white wine
- 2 tablespoons capers, drained (optional)
- Generous handful of chopped flat-leaf parsley
- 1 teaspoon crushed red pepper flakes
- 1 15 oz. can diced tomatoes, with juice
- Salt and pepper to taste

Cook the pasta in a 4-quart pot according to package directions until al dente (slightly chewy, but not overcooked).
Heat the olive oil in a 2-quart saucepan over high heat. Add the garlic and reduce the heat to medium. Saute lightly, adding the olives, wine, capers, if using, parsley, and red pepper flakes.
Simmer, uncovered, for 2 to 3 minutes and then add the tomatoes, letting the whole mixture cook down over medium-high heat to the consistency of a chunky sauce.
Adjust seasoning to taste before serving. Pour over the pasta.
