Ingredients
- 5 T butter)
- 1 pkg sausage patties, cooked and chopped
- 3 sm plum tomatoes, seeded and chopped
- 1/2 med onion, chopped
- 2-3 ribs celery, diced thin
- (1 T minced garlic)
- 1 T Creole seasoning, divided
- 1 doz eggs
- 1 T fresh parsley chopped
- (Non-stick spray)
- 1 1/2 c shredded cheese
- (Hot sauce)
- English Muffins
- (Butter)
- 1 lb grapes

Preparation
Step 1
Melt 2 ½ T butter on a 12” skillet over med heat. Add sausage and cook, stirring for apx 6-7 min. Add tomatoes, & the next 4 ingredients plus ½ of the Creole seasonings. Cook for 5-7 min. Remove from skillet. Whisk together eggs, parsley, and remaining Creole seasoning. Melt remaining butter in skillet and pour egg mixture into pan. As egg cooks, lift edges of cooked eggs and let uncooked egg flow underneath. When most of egg is set, sprinkle w/ sausage mixture & cheese. Cover and let sit for several min.
Meanwhile, Toast English muffins and butter them. Place grapes on side.
