Jenny's Mother-in-law's Chocolate Cupcakes

Ingredients

• *CAKE*
• 1 1/2 * 1 1/2 cup flour
• 1 * 1 cup sugar
• 1 * 1 teaspoon baking soda
• 1/2 * 1/2 teaspoon salt
• 1/4 * 1/4 cup unsweetened cocoa
• 1 * 1 cup water
• 1/2 * 1/2 cup vegetable oil
• 1 * 1 tablespoon vinegar
• 1 * 1 teaspoon vanilla
• *FILLING*
• 1 * 1 8 oz pkg cream cheese
• 1 * 1 egg
• 1/2 * 1/2 cup sugar
• * pinch salt
• 1 * 1 cup dark chocolate chips

Preparation

Step 1

Beat filling ingredients until smmoth and set aside,

Mix cake mixture ingredients until smooth. Mixture will be thin. Fill paper lined tins 1/2 full. Put heaping teaspoon of filling into middle of each filled tin.

Bake at 350 degrees for 30 minutes or until toothpick comes out clean.

Cool. Can frost with can of cream cheese frosting and decorate to fit the ocasion.
