Ingredients
- 1/4 cup butter
- 1 onion, chopped
- 1/4 cup flour
- 1/2 tea. salt
- 1/8 tea. pepper
- 4 cups milk
- 1 - 15.4 oz. can corn, drained
- 1 lb. smoked pork sausage, diced
- 2 cups potatoes, cooked, peeled and cubed
- Garnish: shredded cheddar cheese

Preparation
Step 1
Melt butter in a large saucepan over medium heat. Add onion; cook and stir until tender. Add flour, salt and pepper; cook, stirring constantly, for one minute. Add milk. Increase heat to medium-high and bring to a boil, stirring constantly. Boil and stir for one minute. Add corn and sausage; return to a boil Reduce heat to medium0-low and simmer for 10 minutes. Stir in potatoes; heat through.
top each serving with shredded cheese.
