Ingredients

  • 6 cloves garlic, sliced
  • 24 peppercorns
  • 3 lb. green beans, cut into 3" lengths
  • 12 sprigs fresh basil
  • 2 1/2 cups white wine vinegar
  • 3 cups water
  • 2 Tbsp. pickling salt

Preparation

Step 1

To 6 canning jars, add one sliced garlic clove and 3 whole peppercorns. Pack beans vertically into jars; add 2 sprigs basil to each jar and set aside.

In a large saucepan over medium-high heat, bring vinegar, water and salt to a boil. Ladle the hot liquid over the beans, leaving 1/2" head space.

Wipe rims, secure with lids and rings. Process in boiling wat3r bath for 5 minutes.
