Ingredients
- 1 chicken, cut up
- 2 T oil
- 3/4 cup long grain rice
- 1/2 chopped onion
- 2 tsp salt
- 1 tsp poultry seasoning
- 3 cups fresh mushrooms
- 2 medium carrots, peeled and biased sliced
- 2 cups water
- paprika

Step 1
Brown chicken in oil, remove from skillet. Remove chicken fat except 2 T. Add rice, onion, salt and poultry seasoning. Cook and stir until rice is lightly browned. Add mushrooms, carrots and water, place browned chicken on top rice mixture. Season chicken with additional salt and pepper. Sprinkle with paprika. Cover and simmer on top of stove for 45 minutes or until chicken and rice are done.
