Sloppy Joes

Excellent homemade sloppy joe recipe. Easy to make vegetarian for Russ, simply omit the ground beef and substitute veggie crumbles. Serve on toasted buns with cole slaw.

Ingredients
- 2 pounds lean ground beef
- 1 Tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 6 large cloves garlic, finely chopped
- 1 (6 oz) can tomato paste
- 1 Tablespoon chili powder
- 1 teaspoon dry mustard
- 1 teaspoon sugar
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ginger
- 1 (14.5 oz) can vegetable broth
- 1/3 cup ketchup
- 1/4 cup Worcestershire sauce
- 8 buns, toasted

Preparation
Step 1
Brown the meat in a large skillet over medium heat. Drain. Heat olive oil in a large skillet, add the onion and garlic, reduce heat to medium-low, and cook until the onion is soft and fragrant, about 8 minutes. Add the tomato paste and cook, stirring constantly for 2 more minutes. Stir in the chili powder, mustard, sugar, paprika, salt, and ginger and cook for 1 more minute. Add the broth, ketchup, Worcestershire sauce and whisk until combined. Add meat. Increase heat to a medium-high and bring to a boil. Reduce heat to medium-low, and let simmer, uncovered, for 25 minutes. Serve on toasted rolls with cole slaw.
Variation: To make this dish vegetarian, replace the meat with two 15-oz cans of black beans, drained and rinsed. Add to mixture right before the mixture is brought to a boil.
