Ingredients

  • Topping:
  • 1/4 cup butter
  • 3 lb frying chicken, cut up
  • 1/4 cup flour
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 3 chicken bullion cubes (I only 1 1/2 cubes)
  • 1 1/2 cups boiling water
  • 3/4 cup flour
  • 1/4 cup yellow cornmeal
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp poultry seasoning
  • 1/2 cup milk
  • 2 eggs

Step 1

Melt butter in 13x9" pan. Coat chicken with mixture of flour, salt and pepper. Dip skin side of chicken in butter, plan skin side up in pan. Sprinkle chipped onion and celery between chicken pieces lifting pieces to allow it to go underneath. Bake at 400 for 1 hour.* Remove from oven. Pour topping between chicken. Dissolve bullion cubes in boiling water. Pour over chicken and topping. Bake at 400 for 20-25 minutes until golden brown.

Topping: Combine flour, corn meal, baking powder, salt and poultry seasoning in mixing bowl. Combine milk and eggs. Add to dry ingredients all at once, stirring until smooth.

*I usually use 3 skinless boneless chicken breasts cut in half and bake about 20-25 minutes.
