Step 1
Mix the flour and salt together on a work surface such as a large cutting board or marble slab. Create a well in the center. In a bowl, whisk together the egg yolks and eggs. Pour into the center of the well.
Slowly begin mixing flour into the egg mixture in the center with your finger or a fork or spoon. continue doing this until almost all of the flour is mixed with the eggs and the dough begins to be tough to work with
Knead the dough on a lightly floured surface until it is completely mixed and the dough is very stiff are hard to manipulate.
Rest the dough under wet towel for about 20 minutes.
Working in small chunks, about ¼th the dough at a time, roll out the dough to a long thin strip. Dust a little flour on the dough, fold it in half, and roll it out again. Repeat this step a couple more times to make the dough more elastic.
After that, begin rolling the dough out into thinner and thinner long rectangles. You may need to cut the dough in half and roll out each half separately. Roll out to about 1/16" to ⅛" thick.
Using a sharp knife or pizza wheel, cut the pasta into thin or wide strips, depending not he type of pasta you plan to make. You can also cut out squares, pinching the center together for farfalle, or for ravioli.
In the meantime, bring a large pot of water to a boil. Cook the paste 4-10 minutes depending on size and thickness.
