Ingredients
- 12 Tbsp (1.5 sticks) unsalted butter
- 1 1/2 cups sugar (evaporated cane makes them extra tasty)
- 1 large egg
- 1/4 cup molasses
- 2 cups Whole Wheat pastry flour
- 2 tsp. ground ginger (or crystallized sugar)
- 1 tsp. ground cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt

Preparation
Step 1
Beat 1 cup of sugar with butter until smooth. Add egg and molasses and beat until combined. Whisk together all dry ingredients separately and then combine
them with butter mixture. Roll the dough into 1 inch balls and dip them in the remaining 1/2 cup of sugar. Place them on cookie sheet 2 inches apart. (It
says to use parchment paper; I never have!) Bake at 350 for 8-12 minutes,until cracks appear on tops of cookies. Let them cool for at least 5 minutes.
