COMBINE FLOUR BAKING SODA AND SALT
IN A LARGE BOWL CREAM VEG SHORTENING
AND SUGAR . BEAT IN PEANUT BUTTER .BEAT IN THE EGGS AND VANILLA EXTRACT. BEAT IN LEMON ZEST. GRADUALY BLENS IN DRY INGREDEINTS.
DIVDE DOUGH IN HALF SHAPE EACH HALF INA LOG 2 INCHES IN DIAMETER WRAP IN WAXED PAPER AND CHILL FOR 8 HOURS OR OVERNIGHT
PREHEAT THE OVEN TH 350 DEGREES
CUT THE LOGS INTO 1/4 IN THICK SLICES APART ON A UNGREASED COOKIE SHEET
WITH A FORK FLATTEN COOKIE IN CRISS CROSS PATTERN. BAKE FOR 7 TO 10 MINUTES UNTIL LIGHTLY COLORED
