Lettuce Wrapped Cheeseburgers

Ingredients
- Spread:
- 2 lbs ground beef
- 1/4 tsp salt
- 1 tsp pepper
- 1 Tbsp Worcestershire Sauce
- 1 Tbsp oregano
- 2 Tbsp reduced sugar ketchup
- 2 tomatoes, sliced thin
- 1 head of iceberg lettuce, leaves removed
- 6 slices American cheese
- 1/4 cup mayo
- 3 Tbsp reduced sugar ketchup
- 1 Tbsp dill pickle relish
- dash of salt and pepper

Directions
Heat your grill pan or skillet on medium heat and add a little Kerry Gold Butter.
In a large bowl, mix together the beef, salt, pepper, Worcestershire, oregano and ketchup.
Divide the mixture into 6 sections, and roll each piece into a ball then press down flat and place on the grill pan.
In a small bowl mix together the spread ingredients and refrigerate.
Place 1 cheeseburger on the lettuce leaf, top with 2 slices of tomato, a spoonful of spread, then wrap top to bottom with another lettuce leaf.
Recipe makes 6 cheeseburgers
These are scrumptious!!! If you wish to make ure' catsup a lil less sugar use plain tomato paste a sugar sub if you like, truvia etc I opt for a fruit sugar...a lil vinegar to taste and Violia! catsup....
Hmmm....I am not too familiar with the details on south beach. I am usually so full from 1 burger I dont need a side....if I am extra hungry I will add bacon to it or a fried egg. Sometimes I will make butternut squash fries...you could also make a coleslaw without the sugar in the dressing maybe? :)
You could poke a hole at the bottom of the lettuce to control the juice flow and make less of a mess maybe :) Or you could use more lettuce to avoid the mess. Worked for me :)

These are also very good with a turkey or chicken burger. I made a turkey version tonight and also added homemade pickles.
