  • Fajita chicken strips 1 pkg
  • Portobello mushroom cap 1 per every 2 people
  • cannellini beans 2 cans
  • sun dried tomato paste 1 jar
  • chili powder
  • garlic
  • pepper
  • salt
  • basil
  • sage
  • thyme
  • water
  • fresh baby spinach 1 bag
  • feta 1 C
  • jalapeno cheese tortilla wraps 1 pkg

Preparation

Step 1

Grill chicken strips - set aside
wash mushrooms then slice then the thickness of fajita strips
in a large tupper ware with lid place : chicken, mushroom slices, 1/4C olive oil, 1tsp garlic, 1/2 tsp pepper, 1/2 tsp salt, 1 tsp basil, 1tsp sage, 1tsp thyme & 3 TB sun dried tomato - let marinate at least 20 min - then bake at 470 for 10 min or until mushrooms aretender

in vitamix place drained beans, 2 tsp garlic, 2 TB water, 3 tsp chili powder, 3TB oil, 1 tsp salt - whiz and set aside

cut squares of foil
place tortillas on foil, spread bean mix over tortilla
layer spinach, feta, mushrooms, chicken.
Wrap like a burrito & serve while the chicken is still hot.
