Ingredients
- 1 tsp olive oil
- 1 med. onion chopped
- 2 - 15 oz cans black beans
- 14.5 oz veggie broth
- 1 cup frozen corn kernals
- 1 - 14.5 oz. can mex tomatoes
- 3 bay leaves
- 1 tsp. minced garlic
- 1 tsp. dried thyme
- 1 tsp. balsamic vinegar
- 1/2 tsp. cumin
- sour cream
- cheddar cheese

Preparation
Step 1
Heat oil & saute onions, raise heat and add beans and broth. Add corn and tomatoes, add bay leaves, thyme, vinegar, cumin, and garlic - bring to a boil. Reduce heat & simmer, stir often - remove bay leaf before serving.
