Roasted Garlic & Walnut Crostini with Apple and Thyme

These tasty little bites are perfect as appetizers and work equally as well as a decorative and delicious garnish on the Creamy Garlic Soup.

Ingredients
- BRUSH:
- 12 slices French baguette, 1/4-inch thick
- 2 Tbsp. olive oil, divided
- Salt and black pepper
- PURÉE:
- 2 bulbs garlic, roasted
- 1/4 cup walnuts, toasted
- 1 tsp. packed fresh thyme
- 1/4 tsp. cider vinegar
- TOSS:
- 3/4 cup finely diced sweet-tart apple (such as Honeycrisp)
- 1 Tbsp. dry vermouth
- Fresh thyme

Preparation
Step 1
Preheat oven to 350°.
Brush 1 Tbsp. oil on one side of baguette slices; season with salt and pepper. Bake baguette on a baking sheet, oiled side up, until crisp, 10–12 minutes; let cool.
Purée roasted garlic, walnuts, remaining 1 Tbsp. oil, 1 tsp. thyme,
and vinegar in a food processor until smooth; season with salt and pepper.
Toss apple with vermouth.
Spread roasted garlic mixture onto each crostini, then top each with 1 Tbsp. apple and garnish with thyme.
