Ingredients

  • BRUSH:
  • 12 slices French baguette, 1/4-inch thick
  • 2 Tbsp. olive oil, divided
  • Salt and black pepper
  • PURÉE:
  • 2 bulbs garlic, roasted
  • 1/4 cup walnuts, toasted
  • 1 tsp. packed fresh thyme
  • 1/4 tsp. cider vinegar
  • TOSS:
  • 3/4 cup finely diced sweet-tart apple (such as Honeycrisp)
  • 1 Tbsp. dry vermouth
  • Fresh thyme

Preparation

Step 1

Preheat oven to 350°.

Brush 1 Tbsp. oil on one side of baguette slices; season with salt and pepper. Bake baguette on a baking sheet, oiled side up, until crisp, 10–12 minutes; let cool.

Purée roasted garlic, walnuts, remaining 1 Tbsp. oil, 1 tsp. thyme,
and vinegar in a food processor until smooth; season with salt and pepper.

Toss apple with vermouth.

Spread roasted garlic mixture onto each crostini, then top each with 1 Tbsp. apple and garnish with thyme.
