Ingredients

  • 4 Rock Cornish hens
  • Honey-Lemon Glaze
  • 1/4 cup lemon juice
  • 12 cup honey
  • 1/4 cup grenadine syrup
  • 1/2 cup soft butter
  • 1/2 teaspoon horseradish (optional)
  • Pineapple-Walnut Stuffing
  • 1/2 cup water or pineapple juice
  • 1/4 cup butter
  • 1/2 package bread stuffing mix (4-ounces)
  • 1 slightly beaten egg
  • 1/2 cup crushed and drained pineapple
  • 1/4 cup finely chopped walnuts

Preparation

Step 1

Heat water or pineapple juice and add butter until butter is melted. Stir in remaining ingredients for stuffing. Stuff hens with dressing. Combine lemon juice, honey, horseradish and grenadine. Set aside 1/2 cup for basting; blend remainder with butter. Spread over surface of birds. Roast at 350° for about an hour or until done. Brush occasionally with honey mixture while cooking.
Cook's Notes:
Seal the juices in roast chicken or turkey by warming the oven to 450° then reducing the heat to 350° when you put the bird in the oven.
