Ingredients
- Optional :
- carrots 2 lg
- zucchini 2 lg
- lemon juice 3 TB
- olive oil 3 TB
- chicken stripes 1pkg
- romaine lettuce 1 head
- bell pepper 1
- red onion 1sm
- boiled egg 1 per two people
- avocado 1 per two people
- bag frozen sweet corn
- cheese 1 sm bag
- cherry tomatos 1 pk
Details
Preparation
Step 1
cut carrots & zucchini in thin circles & then in half
place in glass baking dish & drizzle with lemon juice and oil
bake at 400 until barley tender - not crunchy & not soggy
cut chicken into bite size pieces
place in bowl and cover with ranch bread crumbs, paprika & pepper or taco seasoning as an alternative
fry chicken in 2 TB oil
place each item in rows on plates
