Ingredients
- 1 tablespoon oil
- 1/2 pound ground turkey
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon dijon mustard
- 1 teaspoon chili powder
- 2 tablespoons soy sauce
- 1 cup tomato sauce
- 2 cups cooked black beans, 2-3 cups
- 3 cups cooked brown rice

Preparation
Step 1
1. Saute turkey in oil 5 minutes. Add onion-garlic; saute until softened, about 5 minutes.
2. Whisk together lemon-tomato sauce. Add to pan and combine well.
3. Stir in beans, cook 20 minutes. Serve over rice.
Notes: Excellent, delicious, inexpensive, and easy. Very, very good. Definite weeknight meal repeater.
