Apple Pie Cake with Rum Butter Sauce

Ingredients
- 1/4 cup butter, softened
- 2/3 cup sugar
- 1 egg
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 tablespoons hot water
- 1 teaspoon vanilla
- 3 cups apples, peeled and diced
- 1/2 cup chopped pecans
- 1/2 cup brown sugar, firmly packed
- 1/4 cup butter, softened
- 1/4 cup sugar
- 1/2 cup whipping cream
- 1 tablespoon rum
- Whipped cream (optional)

Preparation
Step 1
1. Cream butter; gradually add sugar, beating well. Beat in egg.
2. Combine flour-cinnamon. Add to butter, beat until smooth. Stir in water and vanilla. Fold in apples and pecans; spoon into greased and floured 9" pie plate. Bake at 350 for 45 mins, or until tester comes out clean.
3. Combine sugar-whipping cream in saucepan. Bring to a boil, cook 1 min. Stir in rum. Serve cake warm or cold with sauce and whipped cream.
Notes: This was really very good - nice and moist. David wasn't crazy about the texture though. Used 2/3 cup sugar, which was plenty, and left out the nuts for Macy. Also used less sugar in the sauce - which was unbelievably good. Amounts in recipe reflect my changes.
