Ingredients

  • Prepared pie crust
  • 1/2 cup chopped carrots
  • 1/2 cup chopped green pepper
  • 1/2 cup sweet red pepper
  • 1/2 cup chopped onion
  • 1/2 cup sliced fresh mushrooms
  • 2 cups cooked cubed chicken
  • 1 (15-ounce can) cream of chicken soup
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

To make filling, melt butter in a large skillet and saute all of the vegetables until tender.
Add the soup and chicken to vegetables and stir to combine.
Pour filling into crust.
Sprinkle cheese on top.
Bake pie at 400 degrees for 30-35 minutes or until crust is lightly browned. Let stand for 15 minutes before slicing. Makes 10 slices.
