Ingredients

  • 2 Lemons
  • 3/4 cup Panko (Japanese breadcrumbs)
  • 3/4 cup fresh grated Parmesan Cheese (or Italian cheeses mix)
  • 1/4 cup Bisquick
  • 1 tsp. paprika
  • 1/2 tsp. Old Bay Seasoning
  • 1 Tablespoon chopped flat leafed parsley
  • 4 (4oz,) Tilapia Fillets
  • 1 tsp salt
  • 6 Tablespoons melted Butter

Step 1

Preheat oven to 425 degrees
Grate zest from lemons to equal 2 Tablespoons.
Cut 1 lemon in half; squeeze juice from lemon into a measuring cup to have on hand for extra flavoring if you want it.
Combine panko, Parmesan cheese, paprika, Old Bay seasoning, and 2 Tbl. Lemon zest in a shallow dish.
Lightly season fish with 1 tsp. salt.
Dip fish in 1/4 cup melted butter; dredge in panko mixture, pressing panko and cheese to adhere.
Place fish on a lightly greased rack in an aluminum foil-lined broiler pan.
Add 1 tsp of Lemon juice to remaining melted butter and drizzle over fish. Bake 15 to 20 minutes or until fish flakes with a fork.
