Ingredients
- 2 organic oranges (make sure the skins are thin or the cake will be bitter)
- (1 cinnamon stick) *
- (1 whole star anise) *
- (4 whole cloves) *
- 4 eggs
- 1/4 tsp vanilla
- 3/4 cup agave nectar or honey (if you use honey, choose one very mild in flavor [i.e. clover or orange blossom] so as to not overpower the cake)
- 2 cups blanched almond flour
- 1/2 teaspoon celtic sea salt
- 1 teaspoon baking soda
- (Cinnamon, star anise and cloves are optional for a slight hint of spice in the cake)

Preparation
Step 1
Wash the oranges and boil them whole (peel and all) for 1 ½ hours (with optional spices), or until soft
Place whole oranges (peel and all, but remove the spices) in a food processor and blend until smooth
Process in eggs, vanilla, agave or honey, almond flour, salt and baking soda until well blended
Pour batter into a greased 9-Inch round cake pan
Bake at 375° for 40-50 minutes, until a toothpick stuck in the center comes out clean
Cool in the pan for 2 hours before removing it from the pan
Serve
Serves 6-8
