  • 3/4 cup raw cashews
  • 1 cup Medjool dates (about 10-12 dates), pitted
  • 1 1/4 cup shredded coconut
  • 1/2 tsp vanilla powder, or 1 tsp vanilla extract
  • 50 g bittersweet dark chocolate, chopped (optional)

Instructions

In a food processor, blend the cashews until they become a rough meal. Toss in the dates, shredded coconut and vanilla and let them whirl for a minute or two. The dough is ready when you can easily pinch it together with your fingers.

Line a loaf pan with parchment paper (I have an 4.5 x 8.5-inch pan, but you could use anything close to that size).

Pour the mixture from the food processor into the pan and pack it down tightly. It helps if you wet your fingers a bit and press it in.

In a small pot, bring a few inches of water to a boil. Put the chocolate in a heat-proof bowl and place it over the simmering water until the chocolate has melted.

Drizzle the chocolate over the bars, or coat them entirely. Chill in the fridge for at least an hour, then slice into bars.

Store in the fridge.
