Ingredients
- 1 Cup Long Cooking Rice (Long Grain)- uncooked
- 1 Cup Water
- 1 Onion- Chopped
- 1 Green Bell Pepper- Chopped
- 1 Clove Garlic- Minced (or 1/4 tsp Freeze Dried Garlic)
- 1 tsp Chili Powder
- 1 tsp Ground Cumin
- 1/2 tsp Salt
- 1 14.75 oz Can Red Gold Diced Tomatoes with Lime Juice and Cilantro

Preparation
Step 1
Combine everything in a greased slow cooker except the Red Gold tomatoes and mix well.
Add tomatoes over rice.
Cover and cook on low for 1-3 hours.
