Ingredients
- oil
- 1 cup diced onion
- 1 cup diced peppers
- 3 can enchilada sauce
- 2 cups chopped chicken
- 1 cup shredded cheese
- 1/2 teaspoon cumin
- tortillas

Preparation
Step 1
Heat oil and add onion and peppers until crisp-tender. add 1 can sauce and simmer for 5 minutes. add chicken and cumin. Spray pan. add chicken and cheese to each tortilla; roll up and place seam side down in pan. Pour 2 cans of sauce over top and remaing cheese. Cook at 350 until hot.
