Ingredients
- 3 1/2 Tbsp Margarine
- 1/3 cup Light Brown Sugar
- 1/4 cup Corn Syrup
- 1/2 cup finely chopped, Salted Cashews
- 1/3 cup Flour
- 1 1/2 tsp Vanilla Extract
- 6 oz Chocolate

Preparation
Step 1
Preheat oven to 350.
Grease and flour a cookie sheet.
In a small saucepan, melt margarine over medium heat.
Add brown sugar and corn syrup and bring to a boil, over medium heat, stirring constantly, until sugar dissolves, 3-5 minutes.
Remove from heat.
Stir in cashews, flour, and vanilla extract.
Drop batter in 1/2 tsp mounds, 2" apart, onto prepared cookie sheet.
Using a small spatula, spread each mound into a circle.
Bake for 5-8 minutes, or until browned. Remove from oven and cool.
Melt chocolate and dip cookies halfway into chocolate.
