Smoked Gouda Cauliflower Casserole

Ingredients
- 1 large head cauliflower, trimmed
- 1 medium onion, diced
- 1 tablespoon butter
- 8 oz cream cheese, softened
- 8 oz smoked Gouda cheese, rind removed and grated
- Salt and pepper, to taste
- 1 tablespoon chives, optional

Preparation
Step 1
Preheat oven to 350.
Meanwhile, heat the butter, or olive oil in a medium skillet and cook the onion until caramelized.
Put the cauliflower in a greased baking dish, and break up the florets just slightly, with a fork. Stir in the cream cheese; blend well then stir in the onions. Season to taste with salt and pepper. Add half the Gouda cheese to this mixture. Sprinkle the remaining Gouda over the top and bake at 350º for 30-35 minutes or until bubbly and brown on the top.

This is so beautiful, I’m going to have to try it soon. I have never liked cauliflower, but this season I’m determined to make myself like it. I did that last year with broccoli, and it really did work. Thanks for posting!
i’m pretty sure this would make a convert out of anyone. I haven’t tried cauliflower mashed “potatoes” yet, but they look so fluffy and good! Especially with gouda…that was a gouda decision! (har!)

I love cauliflower and make something like this but the cheese varies – never smoked gouda because I’m not a fan of smoked cheeses. Great dish!
