Ingredients
- COOK:
- 2 lb. russet potatoes, peeled and cubed
- ADD:
- 4 oz. cream cheese, cubed, softened
- 4 Tbsp. unsalted butter, cubed, softened
- STIR IN:
- 1/2 cup crumbled blue cheese (such as Maytag)
- Salt and white pepper to taste

Preparation
Step 1
Cook potatoes in a pot of boiling salted water until fork-tender, 10–12 minutes. Drain potatoes and return them to the pot over medium heat to remove excess moisture, stirring 1 minute. Add cream cheese and butter;
mash potatoes to desired consistency. Stir in blue cheese and season
potatoes with salt and pepper.
