Ingredients

  • 4-5 baby leeks
  • 8 ears of corn
  • 3/4 lb potatoes
  • 2 green peppers
  • Parsley or Dill
  • Olive oil
  • Water

Preparation

Step 1

1. Rinse the leeks thoroughly and chop finely, then saute in a pot with just enough olive oil to cover the bottom.

2. Chop the green peppers and add them to the leeks.

3. Cut potatoes into quarters and remove the kernels from the corncobs (keep 5 of the cobs!)

4. Add potatoes and corn to the pot, then add enough water to cover everything.

5. Add cobs to the pot (This is what gives the soup its wonderful corn flavor).

6. Simmer for 30-40 minutes, adding the fresh herbs, salt and pepper in the last 10-15 minutes.
