Ingredients
- 8 tablespoons unsalted butter (i used 4 tbsp butter and 1/4 cup nonfat plain yogurt)
- 1 cup sugar (used 1/2 cup sugar and 1/2 cup splenda)
- 1 large egg
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 2 bananas, mashed
- 1/3 cup milk
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup chocolate chips
- 1 cup walnuts, chopped (i forgot to add these--don't tell DH!)

Preparation
Step 1
1. Preheat oven to 350 degrees.
2. In a medium mixing bowl, cream together the butter and sugar until they're smooth. Scrape the bowl down, then beat in the egg, spices, banana and milk.
3. In a separate bowl, whisk together the dry ingredients, then gently stir them into butter-sugar mixture.
4. Spoon batter into 12 lightly greased muffin cups. Bake the muffins for 20 minutes, or until a cake tester comes out clean. Remove from the oven, and after 10 minutes turn them out of the pan to cool.
Notes: Very good. Only quibble is that it was very dense and my preference is for a lighter muffin
