Ingredients
- 1 Tbsp butter or margarine, plus more for buttering bread
- 1/2 cup chopped yellow onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 small crookneck squash, chopped
- 1 cup chopped mushrooms
- 2 garlic cloves, chopped
- 4 large eggs
- 2 cups whole milk
- 1/2 teaspoon salt
- Freshly ground pepper
- 2 or 3 drops Tabasco sauce
- 1/2 loaf day-old French bread, sliced, buttered, and then cut into cubes
- 1 1/2 cups grated provolone cheese (divided use)

Step 1
In a large nonstick skillet over medium heat, melt butter. Add onion, bell peppers, squash, mushrooms and garlic. Saute until tender, 6 to 7 minutes.
In a medium bowl, whisk together the eggs, milk, salt, pepper to taste and tabasco sauce. Place bread cubes in a lightly sprayed or oiled 8 x 11 1/2 inch baking dish. Top with all of the vegetable and half of the cheese. Pour egg-milk mixture over all. (Be sure bread is completely covered with mixture.) Sprinkle remaining cheese on top. Cover and refrigerate for several hours or overnight.
Preheat oven to 350 degrees. Bring strata to room temperature before baking. Bake, uncovered, until set, 45 to 50 minutes. Let stand for 10 minutes. Cut into squares and serve.
