Golden Potato Latkes

Ingredients
- 2 pounds Yukon gold potatoes, peeled, cut into 1-inch pieces
- 1 8-ounce onion, cut into 1-inch pieces
- 2 large eggs
- 2 tablespoons unsalted matzo meal
- 1 teaspoon slat
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon baking powder
- 8 tablespoons (or more) vegetable oil

Preparation
Step 1
Shred potatoes and onions with medium shredding blade of food processor. Transfer mixture to kitchen towel; wrap tightly and squeeze out as much liquid as possible. Place potato mixture in large bowl. Mix in eggs, matzo meal, salt, pepper, and baking powder. Preheat oven to 300°. Place a baking sheet in oven. Heat 4 tablespoons oil in heavy skillet over medium-high heat. Drop heaping 1 tablespoon potato mixture for each latke into skillet; flatten to 2 1/2-to 3-inch diameter. Fry latkes until crisp and golden brown, about 3 minutes per side. Transfer latkes to baking sheet in oven to keep warm. Repeat with remaining mixture adding more oil as needed. Serve latkes warm with sour cream and applesauce.
